Chef’s Table

Wednesday 6 August

Six Courses. Paired Drinks. One Epic Night.

Our first Chef’s Table event was so good, we had to bring it back. This time with Chef Aldo from The International – and trust us, you’ll want to be there. Six courses, expertly paired wines, and a front-row seat to the action.

Our very own Chef Dave is teaming up with Chef Aldo from The International Venue in Martin Place. Expect a fusion of Mexican influences and modern Australian cuisine, featuring dishes like beef tartare crumpet with smoked roe, and glazed confit lamb belly with anchovy and sea parlsey.

And because no great meal is complete without a great wine, we’ve partnered with Senses wines for the night. Expect expertly paired wines, with a Senses expert on hand to take you through each sip.

It’s a night for the food-obsessed, the wine lovers, and anyone who just wants a damn good time.

ABOUT THE CHEFS

Chef Aldo Lara
Aldo Lara is currently working with The-Point Group at The International Venue in Martin Place, known for his consulting work with Australian Mexican restaurants. His cooking blends his Mexican roots with a deep connection to the ocean. Born in Mexico City, Aldo was shaped by the country’s rich and diverse food culture. This early exposure sparked a passion that led him to Sydney, where he spent seven pivotal years at the Dolphin Hotel, eventually becoming Head Chef. There, he embraced local produce and made a lasting impact on the venue’s culinary direction. Now, Aldo’s journey continues, inspired by the sea. Spearfishing is more than a hobby — it connects him to the source of his ingredients and fuels his commitment to his craft.

Chef Dave Mcconaghie
Chef David was born in England and raised in the South of France from the age of two. With food being the backbone of French culture, hospitality became second nature to him. He trained and worked in both classical and modern French kitchens before coming to Australia, where he discovered an inspiring restaurant scene filled with unique fusions and incredible flavours. Now at the helm of Henry Deane, Chef David brings a modern French-Australian fusion to the kitchen while always staying true to his roots.
